Cheesy seafood cup appetizer recipe details
Ingredients
Cups: | |
450 g | rice, cooked |
60 g | Queso cheese, grated |
60 g | Parmesan cheese, grated |
½ tsp | cumin, ground |
½ tsp | red pepper, ground |
¼ tsp | cayenne pepper, ground |
Shrimp: | |
250 g | shrimp |
1 tsp | seafood seasoning |
Filling:>/b> | |
230 g | cream cheese |
5 | green onions, chopped |
4 | jalapeno peppers, chopped |
Instructions
Combine all ingredients for the cups in a bowl and mix well. Press evenly into greased mini muffin tins, forming a cup. Bake at 180°C for 15 minutes. Remove from tins and cool to room temperature.Sauté shrimp in the seafood seasoning. When shrimp are done, discard juice and set aside.
In a blender, combine cream cheese, green onions and jalapenos peppers. Process until smooth.
To serve, place cups on serving plates. Spoon teaspoons of cream cheese mixture in the rice cheese cups. Top with a shrimp.
