Ingredients

1	plain cheesecake . see database
350 g	strawberry jam
3 tbsp	sugar
60 g	cream cheese
1 tbsp	fresh lemon juice
500 g	icing, see database
	fresh strawberries, for garnish
	fresh mint leaves, for garnish

Instructions

Place cheesecake in freezer until partially frozen for about 3 to 4 hours.

Take cheesecake and press out mini cheesecakes using cookie cutters. Place them on a cookie sheet lined with waxed paper. Place cakes in the refrigerator.

Heat jam, sugar, cream cheese, and lemon juice in a small pan over medium heat until sugar is dissolved and ingredients are fully combined. Once combined, take from heat and whisk.

Put back on heat and bring mixture to a rapid boil, continue cooking for 5 minutes. The mixture should have a semi solid consistency so that it coats the back of a spoon.

Let cool for 2 to 3 minutes. Pour glaze over cheesecakes and let set. Pipe icing over cheesecakes using a small piper if you have one.

Garnish with strawberries and mint.
