Cheesecake petit fours with creamy strawberry glaze recipe details
Ingredients
1 | plain cheesecake . see database |
350 g | strawberry jam |
3 tbsp | sugar |
60 g | cream cheese |
1 tbsp | fresh lemon juice |
500 g | icing, see database |
fresh strawberries, for garnish | |
fresh mint leaves, for garnish |
Instructions
Place cheesecake in freezer until partially frozen for about 3 to 4 hours.Take cheesecake and press out mini cheesecakes using cookie cutters. Place them on a cookie sheet lined with waxed paper. Place cakes in the refrigerator.
Heat jam, sugar, cream cheese, and lemon juice in a small pan over medium heat until sugar is dissolved and ingredients are fully combined. Once combined, take from heat and whisk.
Put back on heat and bring mixture to a rapid boil, continue cooking for 5 minutes. The mixture should have a semi solid consistency so that it coats the back of a spoon.
Let cool for 2 to 3 minutes. Pour glaze over cheesecakes and let set. Pipe icing over cheesecakes using a small piper if you have one.
Garnish with strawberries and mint.
