Ingredients

4 large kohlrabi, peeled
3 sprig(s) parsley, chopped
30 g pine nuts, toasted
2  shallots, chopped
600 g spinach
150 g Feta cheese, crumbled
250 g crème fraîche
salt and freshly ground black pepper
1 clove(s) garlic, minced
75 ml vegetable stock
nutmeg
2 tbsp butter

Instructions

Boil the kohlrabi, just covered with salted water, for 10 minutes, then drain, but collect the cooking water. Cut off the tops and set aside. Scoop out the flesh, leaving an approximately 1,5cm thick shell. Add the flesh to the tops.

Wash and clean the spinach. In a saucepan, melt the butter. Sauté the garlic and the shallots until lucent. Add the dripping wet spinach and cook stirring until wilted. Season to taste with salt, pepper and nutmeg. Fold in the cheese, pine nuts and 150g of the Crème fraîche.

Fill the kohlrabi with the spinach mixture.

Preheat the oven to 175°C.

Combine the cooking water and the roughly chopped kohlrabi flesh and purée with a hand blender. Stir in the remaining Crème fraîche and season to taste with salt, pepper and nutmeg. Stir in the parsley.

Place the kohlrabi side by side in a casserole dish. Pour in the sauce and bake for 30 minutes. Serve with boiled potatoes.
