Ingredients
4 large | potatoes, peeled and chopped |
2 | onions, peeled and sliced |
225 g | mature Cheddar cheese, grated |
1 | tomato |
salt and pepper |
Instructions
Boil the potatoes together with the onions until the potatoes are cooked. Drain and mash the mixture. Stir in ¾ of the grated cheese and season to taste.Spoon the mash into a baking tray, top with tomato slices and cover with the remaining grated cheese. Place the baking tray into the oven and bake at gas mark 5 until the cheese is golden brown.
Serve with fresh green salad.
