Ingredients

4  ripe but firm avocados
500 g scallops
fresh lime juice, sufficient to cover the scallops
salt and pepper, to taste
2  red chilies, seeded and chopped
2 medium tomatoes, peeled and chopped
1 large onion, thinly sliced
1 tbsp capers, drained and rinsed
4 tbsp olive oil
2 tbsp dry white wine
To serve:
lettuce leaves or parsley

Instructions

Cover the scallops with lime juice. Combine salt, pepper, chilies, tomatoes, onions, capers, olive oil and wine and mix well. Add the marinade to the scallops and marinate overnight, stirring occasionally.

Just before serving halve the avocados and fill them with the mixture. Serve on lettuce or garnish with parsley.
