Ceviche in avocado recipe details
Ingredients
4 | ripe but firm avocados |
500 g | scallops |
fresh lime juice, sufficient to cover the scallops | |
salt and pepper, to taste | |
2 | red chilies, seeded and chopped |
2 medium | tomatoes, peeled and chopped |
1 large | onion, thinly sliced |
1 tbsp | capers, drained and rinsed |
4 tbsp | olive oil |
2 tbsp | dry white wine |
To serve: | |
lettuce leaves or parsley |
Instructions
Cover the scallops with lime juice. Combine salt, pepper, chilies, tomatoes, onions, capers, olive oil and wine and mix well. Add the marinade to the scallops and marinate overnight, stirring occasionally.Just before serving halve the avocados and fill them with the mixture. Serve on lettuce or garnish with parsley.
