Ingredients
1 tbsp | olive oil |
2 stalk(s) | celery, sliced |
2 medium | onions, chopped |
1 | green bell pepper, chopped |
250 g | tomatoes, chopped |
200 g | kidney beans in water |
1 tsp | basil, minced |
1 tsp | oregano, minced |
¼ tsp | cumin |
½ tsp | chili powder |
2 tbsp | cider vinegar |
100 g | cashews |
Instructions
Combine chopped celery, onions, and bell pepper, then sautee them in olive oil until tender.Add tomatoes and beans with water. Season wtih the spices. Cover and simmer for 5-10 minutes or until desired consistency is reached. Then add vinegar and cashews.
Taste and adjust seasonings and serve.
