Ingredients

1 tbsp olive oil
2 stalk(s) celery, sliced
2 medium onions, chopped
1  green bell pepper, chopped
250 g tomatoes, chopped
200 g kidney beans in water
1 tsp basil, minced
1 tsp oregano, minced
¼ tsp cumin
½ tsp chili powder
2 tbsp cider vinegar
100 g cashews

Instructions

Combine chopped celery, onions, and bell pepper, then sautee them in olive oil until tender.

Add tomatoes and beans with water. Season wtih the spices. Cover and simmer for 5-10 minutes or until desired consistency is reached. Then add vinegar and cashews.

Taste and adjust seasonings and serve.
