Ingredients
3 | carrots, peeled, chopped |
1 medium | onion, chopped |
2 stalk(s) | celery, chopped |
500 ml | vegetable stock |
700 ml | tomato juice or syrup |
1 tsp | ground cumin |
1 tsp | ground coriander |
1 tsp | oregano flakes |
1 tsp | ground cinnamon |
1 clove(s) | garlic, minced |
Instructions
Coarsely chop vegetables and combine with all other ingredients in a pot. Bring to a boil, reduce to a simmer and cook uncovered 20 minutes or until vegetables are soft. Stir occasionally.
Remove from heat and cool slightly. Transfer small quantities in a blender and carefully mix until all the sauce is puréed.
Transfer back to a pot and re-heat.
