This is wonderful served on biscuits or plain cakes for afternoon tea.

Ingredients
2-1/2 teaspoons flour
1/2 cup sugar
Grated rind of 2 lemons
3/4 cup lemon juice
3 egg yolks
1 teaspoon butter

In the top of a double boiler, mix sugar and flour. Add the beaten egg yolks, lemon juice, rind, and butter. Cook stirring constantly, until mixture coats back of spoon (about 4 to 5 minutes). Mixture will curdle if you dont stir constantly. Refrigerate and store in a covered jar. Use within a few days.
