Caramelized Onion Stuffed Baked Potato recipe

Ingredients
2 medium | baking potatoes |
100 g | Gruyere cheese, grated, divided |
2 tbsp | sour cream |
1 ½ tsp | butter |
2 medium | red onion, chopped |
2 tbsp | dry sherry |
1 tsp | Worcestershire sauce |
½ tsp | dried thyme |
1 clove(s) | garlic, minced |
Instructions
Pierce potatoes with a fork and place on paper towels in microwave. Microwave at a high setting for 10 minutes, rearranging potatoes after 5 minutes. Allow to cool for 5 minutes.Cut each potato in half lengthwise and scoop out pulp, leaving a 1 cm thick shell.
Combine potato pulp, 50 g cheese and sour cream. Mix well and season with salt and pepper. Spoon potato mixture evenly into shells.
Melt butter in a medium nonstick skillet over medium heat. Add onion and sugar and sauté for 8 minutes.
Stir in sherry, Worcestershire sauce, thyme, and garlic, cook for 1 minute.
Top each potato half with about 2 tablespoons onion mixture and 1 tablespoon of cheese.
Arrange stuffed potato halves on paper towels in microwave and microwave on high for 1 minute just to melt the cheese and reheat.
