Caramel and mango cake with strawberry sauce recipe details
Ingredients
125 g | sugar |
5 tbsp | sugar |
450 g | ripe mango pulp |
4 tbsp | lemon juice |
150 g | whipping cream |
3 medium | eggs |
300 g | strawberries, hulled |
oil | |
75 ml | water |
Instructions
In a pan caramelize 50g sugar. Pour in the water and simmer until thickened. Pour the caramel into a small oiled cake form. Allow to cool.Preheat the oven to 125°C.
In a bowl mix the puréed mango pulp with half of the lemon juice, the cream and 75g sugar. Whisk in the eggs. Pour the batter into the cake form and bake for 1-1,5 hours. Allow to cool overnight.
Purée the strawberries with the remaining lemon juice and 5 tablespoons of sugar. Cut the cake into slices an serve drizzled with the strawberry sauce.
