These deep fried chicken wings have been coated with a slightly spicy Cajun concoction for the best hot wing flavor! This recipe is a great as a light snack for a party, appetizer or even as a meal.
Ready in: 2 hours

Ingredients

Serves: 25
  • 2 or 3 cups flour (pancake mix works too)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion salt
  • 1 tablespoon black pepper
  • 2 eggs
  • 2 cups milk
  • 1 serrano pepper, seeded and sliced
  • 1 teaspoon minced garlic
  • 1 tablespoon butter
  • 1 tablespoon Tabasco(R) hot sauce
  • 1/3 cup Franks(R) or Durkee(R) Cayenne Pepper sauce
  • 2 cups Yoshida Gourmet(R) sauce
  • honey to cut heat, to taste
  • 2 to 5 pounds chicken wings
  • 4 to 6 cups canola oil

Preparation method

Prep: 30 mins | Cook: 1 hour 30 mins

1. Dry mix: combine flour, garlic powder, onion salt, black pepper in a mixing bowl that has a lid. Shake to combine.

2. Wet mix: combine milk and eggs in bowl. Beat with whisk for 1 minute.

3. Cut off small skinny tips of chicken wings, then cut the joint between the upper wing and lower wing, making 2 pieces per wing.

4. Pour oil into 10 quart pot or larger to allow displacement from chicken when placed in oil. Heat. Oil temperature should be 350 degrees F.

5. Mix chicken with egg wash, then put in strainer to drain a little. Add to flour mixture. Add lid to bowl and shake/coat all chicken in flour.

6. Add floured chicken parts to oil, about 10 pieces at a time. Cook until chicken is floating in oil and has a golden brown color to ensure each piece is cooked inside. Remove from oil and place on cookie sheet or equivalent with paper towel to drain.

7. In small saucepan over medium-low heat, melt butter. Add garlic and serrano pepper and cook until you can smell the pepper, about 2 minutes.

8. Add cayenne, Tabasco and teriyaki sauce to mixture and simmer on low for 20 minutes or until hot. Use a utensil to dip in sauce to taste…should be sweeter on the pallet but just a hint of spice when you swallow (this is to allow children to enjoy too). If too spicy, add honey, 1 tablespoon at a time, until desired heat is achieved.

Serving

Use a bowl with lid to place the fried chicken and pour sauce over top about 10 minutes prior to serving. Place lid on bowl, seal and “swoosh” around until all pieces are coated then serve.

Tips:

If you plan on serving hot Cajun Teriyaki Chicken Wings to children then it is a good idea to keep the spice and hotness level at medium to low so that the flavor and the spice doesn’t over power their mouth.

Alternate Flavors For Sauce

The basic sauce ingredients of butter, garlic, and serrano pepper can be used to make other flavors…
Add 2 tablesppons FCOJ and Cayenne Pepper sauce.
Or
add cayenne pepper sauce and honey for another variation.
You can even experiment with other flavors such as Tang or Strawberry Puree’ just to see how that would taste.
