Cajun pork and turnip fricassee recipe details
Ingredients
12 small | turnips, diced |
350 g | pork tenderloin, diced |
40 g | green pepper, chopped |
40 g | celery, chopped |
80 g | onion, chopped |
1 tbsp | spring onions, chopped |
1 tbsp | Cajun seasoning |
2 tbsp | oil |
2 tbsp | plain flour |
500 ml | chicken stock |
salt and freshly ground pepper, to taste |
Instructions
Cover diced pork with the Cajun seasoning and chill for 4 hours.In a saucepan, fry spiced pork in oil until browned. Remove from the pan and set aside.
In the remaining oil stir the flour. Cook for 5 minutes on low heat, then stir in onions, green pepper and celery. Cook until tender. Add pork, turnips and chicken stock. Bring to boil and braise for 50 minutes at low heat.
Season with salt and pepper. Remove from heat and serve, garnished with spring onions.
