Caipirinha cake recipe details
Ingredients
For the flan case: | |
130 g | flour |
2 tbsp | cocoa powder |
3 tsp | baking soda |
130 g | cane sugar |
1 sachet | vanilla sugar |
3 | eggs |
2 tbsp | Cachaça |
130 g | butter |
For the Filling: | |
500 ml | whipped cream |
125 ml | lime juice |
75 ml | Cachaça |
50 g | cane sugar |
250 g | mascarpone |
For decroation: | |
1 | lime, washed, cut in slices |
leaves | of mint |
Instructions
For the flan case stir together flour with cocoa and baking powder and sieve it into a bowl. Add all remainig ingredients and mix with an electric mixer until creamy.Preheat oven to 180°C.
Fill batter into a well greased 26 cm springform and smooth it out. Place springform on the middle tray of the oven. Bake for about 20 minutes. Invert onto a rack, cover with baking parchment and leave to cool.
For the filling whip cream and prepare according to package instructions. Mix it with lime juice, cachaca and cane sugar until creamy.
Fold in mascarpone and then repeat it with the whipped cream.
Cut flan case horzontally and set one piece on a cake plate.
Spread creme evenly over the top and place second flan case over creme. Apply more creme until flan case is completely covered.
For decoration drizzle cake with cane sugar and mint leaves.
Refrigerate until serving.
