Ingredients
Serves: 4- 3 tablespoons lemon juice
- 1/4 cup + 2 teaspoons olive oil
- 1 pound boneless, skinless chicken breasts, cubed
- 1 large onion, sliced
- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 teaspoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 2 plum tomatoes, seeded and chopped
- 1/4 cup minced cilantro
- 4 large tortillas
- 2 cups hot cooked rice
- 1/2 cup salsa
Preparation method
Prep: 10 mins | Cook: 15 mins | Extra time: 1 hour, marinating1. First, combine 2 tablespoons lemon juice and 1/4 cup olive oil in a large plastic resealable bag. Add the chicken, seal the bag, and turn to coat. Refrigerate for 1 hour to marinate.
2. Heat remaining 2 teaspoons of olive oil in a skillet over medium heat. Cook the onions and garlic in the hot oil, stirring, for about 5 minutes. Then pour in the marinated chicken and sprinkle with cumin, salt, and pepper. Continue to cook for about 5 minutes, until chicken is no longer pink in the middle.
3. Add tomatoes, cilantro, and 1 tablespoon lemon juice to the skillet. Portion out the mixture onto the tortillas, add equal amounts of rice to each burrito, and top with salsa. Roll up and serve.
