Buffalo chicken chili recipe details
I created this recipe for a chili competition at work. It was just for fun at first, but at the end of the night I had a grand prize medal hanging around my neck! Enjoy.

Ingredients
Serves: 6- 1 1/2 pounds chicken breast
- 2 cups Buffalo sauce
- 3 carrots, chopped
- 1 medium onion, chopped
- 1 (15 ounce) can great Northern beans
- 1 (15 ounce) can kidney beans
- 1/4 cup pale ale
- 1 box blue cheese crumbles
- 1 bundle celery sticks
- 1 bag carrot sticks
- 1 bottle Ranch dressing (optional)
Preparation method
Prep: 20 mins | Cook: 1 hour1. Preheat oven to 400 degrees F (200 degrees C).
2. Cut the chicken breasts into strips and marinate them in 1 cup of the Buffalo sauce for thirty minutes.
3. Bake for 15-17 minutes in the preheated oven.
4. Saute the carrots and onions in a covered skillet.
5. Combine beans, beer, sauteed carrots and onions, chicken and remaining Buffalo sauce in a pot. Simmer for 30 minutes or more.
6. Serve with blue cheese crumbles, carrots and celery. If there are blue cheese haters in the house, it’s acceptable to offer Ranch dressing for the veggies.
