Bud's breakfast snack bars recipe details
These tasty snack bars are ones I have made for years, and with as many substitutions available as imagination allows you can change the recipe to fit your on hand pantry items. (As this is not a rocket science recipe due to substitutions, we are looking for very stiff dough to work with).

Ingredients
Serves: 18- 1/2 cup very soft or melted butter
- 1-cup smooth or crunchy peanut butter
- 1/4 cup honey
- 1 tbl vanilla
- 1 tsp baking powder
- 1 tbl cinnamon
- 1-cup brown sugar
- 1-cup flour…white, wheat or combination
- 1 1/2 cup rolled oats (oatmeal)
- 1 1/2 cup granola cereal or any crunchy cereal you have on hand
- 1/2 cup strawberry (or any flavor jam or preserves you prefer)
- 1/4 cup chocolate chips
- Nuts, raisins, or any diced dried fruits you like (optional)
Preparation method
Prep: 15 mins | Cook: 20 mins | Extra time: 1 hour, cooling1. Pre-heat oven to 350 degrees F (175 degrees C). Pam or grease a 9×13 pan and set aside.
2. In a large bowl stir or mix lightly the butter, peanut butter, honey, and vanilla.
3. Add baking powder, cinnamon, brown sugar, flour, and 1 cup of oats and 1 cup of cereal (save ½ cup of oats and ½ cup cereal for final topping). Mix until even texture.
4. Divide mixture into 1/3-2/3 sized portion.
5. I hand press the 2/3 portion of mixture into the pre-greased pan keeping it about the same thickness with no edge or lip. Hand pressing it in just seems to work better than anything else I have tried to spread it out with.
6. Using a spatula spread the jam or preserves evenly over the top. Sprinkle chocolate chips, nuts, or dried fruit on top of jelly. Crumble the remaining 1/3 of mixture over the top of your center layer.
7. Sprinkle the remaining ½ cup of oats and cereal over the top of this. I then use a spatula or hand to press this added topping firmly down to level it all out.
8. Bake for 20-25 minutes. Let cool completely on wire racks, or refrigerate until cool. Use a plastic knife to cut bars in pan, or remove entire pan contents and cut into bars on a cutting board.
