Broccoli Fritters recipe
Ingredients
1 head(s) | broccoli |
2 clove(s) | garlic, minced |
1 medium | onion, diced |
6 large | eggs, beaten |
4 tbsp | Parmesan cheese, grated |
280 g | polenta |
salt and pepper, to taste | |
oil for frying |
Instructions
In a large bowl combine broccoli, garlic, onion and eggs; mix well. Stir in Parmesan and polenta and toss.
Form into fritters. Add another egg if mixture is too dry. If it is too wet, add more polenta. Season with pepper to taste.
Heat oil in a large frying pan and place fritters in hot oil. Cook, turning once, until well browned on each side. Serve hot.
