Ingredients
For the batter: | |
180 g | butter |
4 | eggs |
180 g | sugar |
2 tbsp | Calvados or apple juice |
180 g | flour |
1 tsp | baking powder |
For the topping: | |
750 g | sweet apples |
40 g | butter |
40 g | sugar |
40 g | almond flakes |
1 | egg |
Instructions
Melt the butter. Whisk the eggs with the sugar and Calvados until creamy. Mix the flour with the baking powder and stir it together with the melted butter into the egg mixture.Preheat the oven to 175°C and grease a springform tin (26cm).
Wash, peel, quarter and core the apples, then cut them in slices. Pour half of the batter in the springform. Divide 1/3 of the apples on the dough. Cover with the remaining batter and arrange the remaining apples circular and slightly overlapping on top.
Melt the butter and trickle in the sugar. Allow to cool slightly. Stir in the egg, then fold in the almonds. Evenly divide the mixture on top of the cake.
Bake for 45 minutes. After 25 minutes cover with parchment paper, otherwise the surface will get too dark.
Let cool slightly, then remove the cake from the springform and transfer on a wire rack to cool completely.
