Breakfast cookies recipe details
- Ingredients
- 1 cup white flour
- 1/2 cup oat bran
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
- 1 teaspoon aluminum-free baking powder
- pinch salt
- 1 cup Sucanat or unrefined sugar
- 1/3 cup olive or canola oil
- 1/4 cup milk
- 2 large egg whites
- 1/2 cup orange juice
- 1-1/2 teaspoons vanilla
- 2 Tablespoons molasses
- 3 cups rolled oats (not instant)
- 1 cup golden raisins
Preheat oven to 375 degrees.
Sift flours with oat bran, spices, baking powder, and salt; set aside. In another bowl, beat sugar and oil until creamy. Add milk, egg whites, orange juice, molasses, and vanilla. Beat until blended. Gradually combine flour mixture with milk mixture. Stir in rolled oats and raisins.
Drop rounded tablespoons of dough onto ungreased baking sheets. Bake at 375 degrees for 10 to 15 minutes or until golden brown. Cool on sheets for 2 minutes then transfer to racks. Store in airtight container.
