Brandied Lemon Butter recipe

1/2 cup unsalted butter
1 cup white sugar
1 Tablespoon plus 1 teaspoon lemon rind
2 lemons (juice of 2 lemons)
3 ounces brandy (or rum)

In a medium saucepan, melt the butter over medium heat. Blend in the sugar, stirring constantly. Stir in the grated lemon rind. Add the lemon juice and brandy. Stir until smooth. Serve with French toast.
