Boiled mackerel with peppers recipe details
IngredientsWhole mackerel, cleaned (1 1/2pounds), olive oil (2tbsp), thinly sliced onion (1small), thinly sliced scallions (2), extra virgin olive oil (2tbsp), finely chopped mint (2tbsp), thinly sliced garlic (2cloves), salt and freshly ground black pepper, red and green bell pepper, seeded and sliced about ½ inch wide and 2 inches long (1large), lemon wedges (for garnish) and balsamic vinegar (3tbsp).
Method of preparation
Take a broiler, heat it. Take a broiling tray; broil the mackerel on it for about 20 minutes until its flesh gets easily separate from the bones. Keep the mackerel at the room temperature. Sprinkle salt and pepper and keep it side. Take a frying pan of medium size, place it over medium heat. Add bell pepper and cook it for about 8 minutes until it gets tender. Add garlic, scallions, onion and mint in it. Cover the pan and keep it to simmer for 3 minutes. Then add salt and pepper and then sprinkle the extra olive oil on the top of peppers. When the dish gets ready then garnish it with lemon wedges and serve it at room temperature.
