Recipe given to Rock Village Bed and Breakfast from The Candlelight Bed and Breakfast in Sackets Harbor, New York.
Strata: Place 2/3 of bread cubes in a greased 13 x 9-inch baking dish. Cut cream cheese in small cubes and dot over bread. In a large bowl, beat remaining ingredients and pour over bread. Cover with foil and refrigerate overnight.
The next morning, remove dish from refrigerator at least 30 minutes before putting it in oven. Cover and bake at 350 degrees for 30 minutes. Uncover and bake an additional 30 minutes or more until golden brown and center is set. (You may need to reduce the temperature about 25 degrees for the last 10 minutes or so to make center set. Otherwise, it tends to become very well done on the outside.) If the dish is very full, it will take longer to set up. It tends to puff while baking. Remove from oven and let it rest about 5 to 10 minutes before serving. You can cut off the very outside crust to make it more appealing to the eye.
Sauce: In a small saucepan, mix sugar and cornstarch. Add water and bring to a boil for 3 minutes, stirring constantly. Stir in blueberries, reduce heat, and simmer 8 to 10 minutes. Stir in butter until melted. Serve over strata. Makes 1-3/4 cups sauce. Try strawberries, raspberries, or blackberries, too. Sauce is great over pancakes or french toast.
Note: The recipe is noticeably different with frozen berries; the skin on the berry is tougher.
