Blueberry Sour Cream Pancakes recipe
- Ingredients:
- 2 cups all-purpose flour
- 2 Tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 large eggs
- 2 cups sour cream*
- 1/3 cup canola oil
- 2 cup blueberries, dusted with nutmeg
Instructions:
In a bowl, whisk together the flour, sugar, baking powder, and baking soda. In another bowl, whisk together the eggs, sour cream, and oil. Add the flour mixture and stir the batter until it is just combined. Fold in the blueberries gently. Bake on a griddle heated to 350 degrees.
*Note: I rarely use all the sour cream. Plain yogurt works well. Low-fat sour cream or a combination of both.
