Ingredients

200 g blueberries, fresh or thawed, washed, drained
60 ml apricot jam
350 ml vanilla ice cream
4 tbsp peanuts, chopped, optional

Instructions

Combine blueberries and jam in a saucepan and cook over low heat, for about 5 minutes, stirring frequently. Blueberries should be well softened. Cover and refrigerate until ready to assemble.

To serve, take 4 dessert dishes and fill with a layer of the ice cream. Pour over blueberry sauce. Garnish with nuts, if desired.
