Blueberry cream cheese crunch recipe details
- Ingredients Crust:
- 1-1/2 cups all purpose flour
- 1 cup graham cracker crumbs
- 2 teaspoons baking powder
- 1/4 cup sugar
- 1/4 cup slivered almonds
- 1/2 cup melted butter
- Cream Cheese Filling:
- 1-1/2 pounds cream cheese
- 3/4 cup sugar
- 4 large eggs
- 2 Tablespoons flour
- 1 Tablespoon vanilla extract
- 1-1/2 cups fresh or frozen blueberries
- 1-1/2 cups muesli cereal or granola
Preheat oven to 350 degrees. Grease a 9 x 13-inch pan. Sift together flour, cracker crumbs, baking powder, and sugar. Add slivered almonds. Mix with melted butter. Evenly spread crust on bottom of pan (use fingers). Bake at 350 degrees for 20 minutes.
Filling:Blend until creamed with hand blender or food processor. Spread cream cheese filling over baked crust. Evenly sprinkle blueberries over cream cheese filling. Evenly sprinkle over top.
Bake at 350 degrees for 45 minutes. Let cool – can be served hot or cold and with vanilla ice cream or whipped cream.
