Blueberry cookies recipe details
|For the dough:|
|100 g||brown sugar|
|80 g||butter or margarine|
|80 ml||skim milk|
|1||grated lemon peel|
|1 tsp||baking powder|
|For the Frosting:|
|130 g||powdered sugar|
|1 tbsp||butter or margarine|
|25 tsp||grated lemon peel|
InstructionsPreheat oven at 180°C.
Prepare a baking sheet with cooking spray.
Making the batter:
Combine brown sugar, flour, cinnamon, baking powder, baking soda and salt in a mixing bowl. Using a blender, cut in margarine until pieces are very small (like peas).
In another mixing bowl, combine egg white, milk, peel and blueberries. Mix the dry ingredients with wet ingredients until just moistened.
Using a tablespoon drop dough 5 cm apart on prepared baking sheet. Bake for 10 to 12 minutes or until edges are lightly browned.
Making the frosting:
Combine powdered sugar, 1 tablespoon butter, peel and enough water to mix into spreading consistency.
