Blueberry coffeecake recipe recipe details
- Ingredients
- 1 cup sugar
- 1/2 cup light brown sugar
- 8 ounces cream cheese
- 2 Tablespoons butter
- 2 eggs
- 2 cups blueberries (fresh or frozen)
- 1 Tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 Tablespoon cinnamon/sugar mixture
Heat oven to 350 degrees. Coat a bundt pan with non-stick cooking spray. Beat sugars, cream cheese, and butter until creamy. Add eggs and vanilla and beat until smooth. In a small bowl, combine flour, baking powder, cinnamon, and salt. Combine the flour mixture into the cream cheese mixtures. Fold in blueberries. Pout the batter into the prepared bundt pan and sprinkle with cinnamon/sugar mixture.
Bake for 1 hour or until toothpick comes out clean. Cool for 10 minutes, then invert onto a plate or serving dish. Note: A powdered sugar/milk glaze can be drizzled over the top of the coffeecake if desired.
