
Blueberry bread
Blueberry Bread recipe
Freezes beautifully and is requested repeatedly at The Governor’s House. Made with blueberries from our plants!
- Ingredients:
- 2/3 cup shortening
- 1-1/3 cup sugar
- 1/2 cup milk
- 4 eggs
- 1/2 teaspoon lemon juice
- 1 cup crushed pineapple, drained
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups blueberries
- 1 cup nuts, chopped
- 1/2 cup flaked coconut
Instructions:
Preheat oven to 350 degrees. Grease two 8 x 4 x 2-inch loaf pans. Cream shortening and sugar. Mix milk, eggs, lemon juice, and crushed pineapple; add to creamed mixture. Beat in dry ingredients. Fold in blueberries, nuts, and coconut. Pour into pans and bake 1 hour. Cool 10 minutes and remove from pans.
