- Ingredients
- 1/4 cup shortening
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 cups blueberries (large from Hammonton, NJ)
- Topping:
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
I remember as a child, I would spend a few weeks of the summer with my Grandmom and Grandad down in New Jersey, South Jersey, in the Pine Barrons on the Mullica river. My Grandmom was the best cook and everything had to be so precise. She was so kind, soft, and gentle that every time I serve from her recipe collection it warms my heat to tell my guests about her.
She would hand us a basket and ask us to fill it full of wild blueberries from the forest and upon our return she’d bake us our favorite Blueberry Buckle. I miss you Grandmom. …Laurie
Grease a 9-inch square pan and preheat oven to 375 degrees . Mix together shortening, sugar, egg, flour, baking powder, and salt. Stir in milk and blueberries. Place in prepared pan. Blend topping ingredients until it forms crumbles and sprinkle on top of blueberry cake mixture and bake for 30 to 35 minutes.
