Blue Corn Pancakes recipe

- 1-3/4 cups blue corn meal
- 3/4 cup unbleached white flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 2 Tablespoons sugar
- 4 Tablespoons melted butter
- 4 eggs, beaten
- 2 cups milk
Blue corn meal is a specialty product from the southwest. May be available in natural food stores or gourmet food sections of your supermarket.
Combine dry ingredients. Beat eggs with milk, slightly, carefully add melted butter. Add liquid ingredients to dry and combine. Let sit for 5 minutes before cooking on medium griddle.
Serves:6 to 7 (makes approximately 22 five-inch pancakes).
