Blini russian pancakes recipe details
Ingredients
2 medium | eggs |
1 tbsp | sugar |
¼ tsp | salt |
50 g | flour |
550 ml | milk |
1 tbsp | vegetable oil |
1 tbsp | butter |
Instructions
Note:These pancakes are made very thin and then folded up to become thicker and to hold the filling.In a medium bowl, whisk together the eggs, sugar and salt. Then add flour and milk mix until well blended.
Heat a skillet over medium heat. Lightly oil the pan.
Pour about 2 tablespoons of the batter into the pan.
When edges are crisp looking and center appears dry, flip and cook for about 1 minute on the other side, or until golden brown.
Place blini on a plate. Put a little butter on top, and stack the next blini on top and so on.
To serve, spread with desired filling, fold in half, and in half again, to form a triangle.
Best with sour cream, jams, honey or with mushroom sauce and chicken.
