- When I was growing up in the forties and fifties, times were much harder for us than they are today. Our family would pick blackberries to can and to make pies in the cold winter months. My grandmother would make a jar of blackberry jam just to make this pudding; most of the other items came from the pantry. I still make the pudding today, thanks to a wonderful legacy given to me by Grandma Bivins of Roswell, Georgia. Marjorie Sample
- Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup blackberry jam (8 ounces or more)
- 1 cup sweet milk
- 1-1/2 cups flour (self-rising)
- 1 teaspoon baking powder (optional)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Beat eggs until light, beat in sugar and jam. Combine dry ingredients, stir with milk, pour into buttered casserole dish and bake in 350-degree oven for 30 to 40 minutes. Serve warm with sweet cream.
