Blackberry fool recipe details
Ingredients
450 g | fresh blackberries |
25 g | custard powder |
40 g | caster sugar |
300 ml | milk |
120 g | greek yogurt |
1 tsp | icing sugar |
Instructions
Put the custard powder into a bowl. Add 15g of the sugar and 4 tablespoons of milk and blend to a smooth paste.Add remaining milk into a small saucepan and bring to the boil. Then stir the boiling milk into the custard powder. Return to the pan and bring back to a boil, stirring constantly until the custard has thickened.
Pour the mixture into a bowl and allow to cool a little. Cover with plastic film before refrigerating for at least 1 hour to allow the fool to set.
Cook blackberries with the remaining sugar over low heat and then process fruit in a blender until pureed.
Whisk the chilled custard until very smooth. Add yogurt and fold in the fruit puree. Spoon into serving glasses and chill for 1 hour.
To serve sprinkle with icing sugar.
