Beulah’s banana pecan cake recipe, recipe Rating: 4.7

Ingredients:
1-1/2 cups oil
1-1/2 cups sugar
3 eggs
1 teaspoon baking soda
1 teaspoon salt
3 cups flour
1 Tablespoon vanilla
1/2 cup evaporated milk
1-1/2 cups mashed banana (about 3)
1 cup chopped pecans
Instructions:

A recipe from Beulah Kirby, a neighbor, via Pam Miller of the Hummingbird Inn.

Mix oil and sugar; add eggs. In a separate bowl, sift flour with salt and baking soda; add to egg mixture. Add vanilla and milk; mix well. Add bananas and pecans. Pour into a greased and floured bundt pan.

Bake at 350 degrees for 60 minutes or until toothpick inserted in center comes out clean. Invert onto plate to cool. Good served chilled from the refrigerator. Can be frozen.
