Mushrooms, green peppers and plenty of green onions fill this smoky, family-pleasing meatloaf. Whip up plenty of mashed potatoes.
Ready in: 1 hour 40 mins

Ingredients

Serves: 6
  • 2 pounds ground beef
  • 1 1/2 cups panko bread crumbs
  • 2 cups chopped fresh mushrooms
  • 1 green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 2 medium eggs
  • 1 tablespoon liquid smoke
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 2 cloves garlic, minced
  • 1/2 cup ketchup

Preparation method

Prep: 30 mins | Cook: 1 hour | Extra time: 10 mins, resting

1. Preheat oven to 375 degrees F.
2. Mix all ingredients except ketchup. Form into loaf shape, place in glass baking dish. Cover with ketchup.
3. Bake until a meat thermometer reads at least 160 degrees F, about an hour. Remove from oven and let sit for 10 minutes to allow juices to settle before slicing.
