Ingredients
900 g | mixed berries of your choice, e.g. raspberries, brambles, strawberries |
250 g | curd cheese |
500 g | mascarpone |
250 g | soft butter |
340 g | sugar |
2 pack(s) | vanilla sugar |
6 medium | eggs |
350 g | flour |
1 pack(s) | baking powder |
30 g | cocoa powder |
½ | lemon, juice |
1 dash(es) | salt |
500 ml | water |

2 pack(s) | red jelly glaze |
Instructions
In a bowl, combine the butter, 200g of the sugar, half of the vanilla sugar and the salt and stir until creamy. Whisk in the eggs. Stir in the sieved flour, baking powder and the cocoa.Preheat the oven to 150°C. Pour the batter into a buttered deep baking tray and bake for 25-30 minutes. Allow to cool.
In a bowl, mix together the mascarpone, curd cheese, 100g of sugar, the remaining vanilla sugar and the lemon juice. Spread the cake bottom with the mixture and divide the berries on top.
In a saucepan, bring the jelly glaze with water and 40g sugar to a boil. Pour the glaze over the berries. Allow to cool for 1 hour.
Serve garnished with lemon balm.
