Berliner doughnuts recipe details
Ingredients
500 g | flour |
80 g | sugar |
1 pinch(es) | salt |
200 ml | milk |
42 g | yeast |
80 g | soft butter |
2 medium | eggs |
10 tbsp | raspberry jam or apricot jam or plum butter |
1 kg | lard or hard vegetable fat |
icing sugar, to dust |
Instructions
Mix together the flour, the sugar and a pinch of salt. Heat the milk until lukewarm. Mix together 100ml of the milk and the yeast until creamy. Pour into the flour mixture. Cover and allow to rise for 15 minutes.Melt the butter. Whisk in the eggs and the remaining milk. Stir into the flour mixture and knead until the dough is smooth and pliable. Cover and allow to rise at a warm place until doubled in size.
Knock together the dough and knead again. Form a roll. Cut the roll into 18 pieces. Form to balls. Cover and allow to rise for another 20 minutes.
Heat the fat in a large saucepan to 170°C. Carefully place the Berliner into the fat and fry, turning once, until golden brown on both sides. Drain on kitchen paper.
Heat the jam and fill it into a piping bag with a small nozzle. Poke a hole into the side of the Berliners and squirt some jam into each.
Dust with icing sugar and allow to cool, but serve fresh.
