Beef salad recipe details
Ingredients
300 g | beef, cooked and diced (e. g. leftovers from a roast) |
2 | hard boiled eggs, diced |
2 | potatoes, cooked and diced |
1 | onion, chopped |
4 | pickles, diced |
2 | tomatoes, diced |
For the dressing: | |
1 tsp | mustard |
3 tbsp | beef stock |
2 tbsp | vinegar |
5 tbsp | oil |
salt and pepper, to taste | |
2 tbsp | parsley, chopped |
Instructions
Place the beef, eggs, potatoes, onions and pickles into a bowlIn a small bowl, mix together the dressing ingredients until well combined and smooth. Pour the dressing over the beef salad and mix carefully. Let steep for a while!
Sprinkle with fresh parsley and serve.
