Beef and sweet potato curry recipe details
Ingredients
3 tbsp | sesame oil |
2 tsp | chilli flakes |
1 tsp | turmeric |
800 g | (approx) stewing steak, cut into roughly 2.5 cm cubes (bite-size pieces) |
600 ml | beef stock |
1 tsp | soft brown sugar |
500 g | sweet potato, peeled and cut into bite-size pieces |
For the blended paste: | |
2 large | onions, roughly chopped |
4 clove(s) | garlic, roughly chopped |
2 stalk(s) | lemon grass, roughly chopped |
2 ½ | cm piece of fresh root ginger, roughly chopped |
Instructions
Blend the ingredients for the paste. Heat the oil in a large heavy based saucepan and stir fry the paste over a low heat for 5 minutes. Add the chilli flakes and turmeric and stir fry for 2 minutes. Add the beef and fry, stirring frequently, for a further 5 minutes or until beef is sealed.Add the stock and sugar and bring to the boil, then reduce heat to low, cover and simmer the curry for 2 hours, stirring every 30 minutes, until the meat is tender and the sauce is thick (do not allow to dry out add a little water if too dry).
Boil the sweet potato in some salted water for about 8 minutes until tender and add to the curry just before serving. serve with boiled rice.
