Ingredients

3 tbsp sesame oil
2 tsp chilli flakes
1 tsp turmeric
800 g (approx) stewing steak, cut into roughly 2.5 cm cubes (bite-size pieces)
600 ml beef stock
1 tsp soft brown sugar
500 g sweet potato, peeled and cut into bite-size pieces
For the blended paste:
2 large onions, roughly chopped
4 clove(s) garlic, roughly chopped
2 stalk(s) lemon grass, roughly chopped
2 ½  cm piece of fresh root ginger, roughly chopped

Instructions

Blend the ingredients for the paste. Heat the oil in a large heavy based saucepan and stir fry the paste over a low heat for 5 minutes. Add the chilli flakes and turmeric and stir fry for 2 minutes. Add the beef and fry, stirring frequently, for a further 5 minutes or until beef is sealed.

Add the stock and sugar and bring to the boil, then reduce heat to low, cover and simmer the curry for 2 hours, stirring every 30 minutes, until the meat is tender and the sauce is thick (do not allow to dry out add a little water if too dry).

Boil the sweet potato in some salted water for about 8 minutes until tender and add to the curry just before serving. serve with boiled rice.
