Ingredients
Serves: 6- 1 pound boneless, skinless chicken breasts
- 1/4 teaspoon black pepper
- 1 (14 1/2 ounce) can chicken broth
- 1 cup hickory flavor barbecue sauce
- 1/4 cup molasses
- 1 tablespoon ground ancho chili pepper
- 1/2 teaspoon ground cinnamon
- 2 1/4 cups water
- 1 cup quick-cooking grits
- 1 cup canned pumpkin
- 3/4 cup shredded pepper Jack cheese
- 1 tomato, seeded and chopped
- 6 tablespoons sour cream
- 2 green onions, chopped
- 2 tablespoons minced fresh cilantro
Preparation method
Prep: 20 mins | Cook: 25 mins1. Arrange chicken in a Dutch oven. Dust with pepper.
2. Whisk 1 cup broth with barbecue sauce, molasses, chili pepper, and cinnamon in a mixing bowl. Then drizzle over the chicken. Set over medium-high heat.
3. When mixture comes to a boil, turn heat down to low and put a lid on the Dutch oven. Cook for about 20 minutes, until chicken is cooked through. Tear up the meat.
4. Pour 2 1/4 cups water and the rest of the broth into a saucepan and set over high heat. When the liquids boil, add grits and pumpkin. Turn heat down to low. Cook for about 6 minutes to thicken, then add cheese and stir to melt.
5. Serve chicken and sauce spooned over grits, sprinkled with tomato, sour cream, green onions, and cilantro.
