Ingredients
100 g | flour |
4 tbsp | cold water |
2 tsp | salt |
2 tbsp | olive oil |
2 medium | eggs, separated |
500 g | fish fillet |
extra flour for dipping |
Instructions
Soak fish for 25 minutes in salted water.Combine egg yolks, flour, cold water, salt and oil and mix.
Beat 2 egg whites until stiff and fold into flour mixture.
First dip fish into extra flour, then into batter, then into flour again and into batter again. Fry in oil until golden brown.
