This group of recipes creates an incredible menu of Southern Barbecue as it was prepared several generations ago. It was passed down to me from my Aunt Dora Simmons (we’re all from Memphis, TN), who had received it from her family. This is the same Barbecue as it was prepared by Leonard’s Barbecue on Old Highway 51 South in Memphis. Place pork in flat pan, cover with foil. Cook in oven at 275 degrees for 4 to 5 hours or until done, basting with barbecue sauce every half-hour (or more if meat tends to dry out). When meat is fully cooked, tearapart while still hot. Do not cut!Serve with more barbecue sauce, barbecue beans, and coleslaw. Makes a to-die-for sandwich (with barbecue sauce brushed on the insides of the bun) or a barbecue entree.
