Banana yogurt pancakes recipe details
- Ingredients:
- 1 cup flour
- 1 Tablespoon sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup plain yogurt (I use Nancey’s whole milk with honey)
- 1-1/2 cups mashed ripe banana
- 1/4 to 1/2 cube (1/8 to 1/2 cup) butter, melted
Combine flour, sugar, baking, soda, and salt. In a medium bowl, whisk together eggs and yogurt. Whisk banana and melted butter together in a separate bowl and add to yogurt mixture.
Add dry ingredients to wet ingredients just until incorporated. Batter will be lumpy. Spoon onto 325-degree grill and flip when first bubble pops.
Best with powdered sugar sprinkled over the top and served with butter. Syrup overwhelms the delicate taste of these pancakes. Garnish with around 5 slices of banana cut 1/4 inch thick after you have sprinkled pancakes with powdered sugar.
