Banana mince bake recipe details
Ingredients
1 kg | mince |
1 kg | aubergines, cut into 1 cm rings |
2 medium | onions, finely chopped |
2 clove(s) | garlic, crushed |
2 tsp | curry powder |
60 g | flour |
60 ml | tomato puree |
60 ml | chutney |
60 ml | Worcestershire sauce |
250 ml | beef stock |
2 medium | bananas, sliced |
salt and freshly ground pepper, to taste | |
For the topping: | |
300 ml | banana yoghurt |
2 medium | eggs, beaten |
60 g | flour |
½ tsp | curry powder |
½ tsp | turmeric |
Instructions
Preheat the oven to 180șC. Spray a large ovenproof dish with non-stick spray.Sprinkle the aubergine slices with salt and leave in a colander for a few minutes. Pat dry with paper towels and cut into cubes.
Fry the mince until done and then remove from the pan. Sauté the onion and garlic until soft. Add the aubergine cubes and curry powder and stir-fry for another minute. Sprinkle with cake flour and mix lightly. Add the mince back in the pan together with the remaining ingredients.
Let simmer for about 5 minutes so that flavours fully develop.
Mix all the topping ingredients and pour over the mince mixture.
Bake for about 30 minutes.
