Banana coconut bread recipe details
Ingredients
250 g | wheat flour |
50 g | spelt wholemeal flour |
50 g | coconut flakes |
2 tsp | baking powder |
20 g | fresh yeast |
1 dash(es) | salt |
50 g | brown sugar |
160 g | creamy coconut milk |
200 ml | sparkling water |
30 g | butter |
2 medium | bananas |
Instructions
Grease a half round loaf pan (30cm/12″).Mix both flour, baking powder, coconut flakes, salt, sugar and crumbled yeast.
Warm coconut milk with sparkling water, melt butter in the warm milk. Add coconut milk to the flour and mix well. Mash 1 banana and stir in.
Fill half of the dough in the baking dish. Halve second banana lengthwise and press slightly in the doug. Fill rest of dough on top. Cover and let stand for 15 minutes at a warm place.
Preheat oven to 200°C.
Place a bowl with boiling water on the bottom of the oven. Bake for 35 minutes. Turn off the oven. Let cool on a wire rack. Store in an airtight container or wrapped in aluminium foil.
