Baked tilapia and fresh spinach details
Ingredients1. Tilapia fillets (4 to 6)
2. chicken broth (1/4c)
3. cooking spray
4. onion powder (1/4tsp)
5. cleaned baby spinach (8 to 12 ounces)
6. salt (to taste)
7. chopped tomato (1small)
8. creole seasoning blend
9. thinly sliced green onions (4)
10. pepper (to taste)
Method of preparation
1. Take a baking dish of about 9-13 inch. Spray the dish with cooking spray and then add the spinach in it. Make the spinach to fit in the baking dish and then steam or saute it slightly for about 1 to 2 minutes to wilt it. Sprinkle the salt, onion powder and pepper over the sauted spinach and then add the chicken broth.
2. Take the tilapia fillets in a bowl, sprinkle lightly with salt, pepper and creole seasonings. Now arrange the fillets over the spinach in the baking dish and then sprinkle with chopped tomatoes and the sliced green onions.
3. Cover the baking dish with a foil and place it in the oven and bake it for about 20 to 25 minute or until the fish flakes easily with a fork at 350 degrees. When it gets ready then serve it with a rice pilaf or baked potatoes.
