Baked spanish omelet recipe details
- Ingredients
- 6 eggs
- 1 cup milk
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dry taco seasoning (or to taste)
- 3 Tablespoons butter, melted
- 1/2 cup cheddar cheese
- 1/2 cup pepper jack cheese
- Cilantro, fresh
- Salsa
Place eggs, milk, flour, salt, pepper, and taco seasoning in a blender and blend well. Spray a 13 x 9-inch pan with non-stick cooking spray and evenly distribute melted butter on bottom. Pour batter into prepared pan. Bake 20 minutes. Omelet will be puffy around edges and should be dry looking.
Shred cheese. Mix cheeses together and sprinkle on baked omelet. Roll omelet up like a jelly roll, starting at the long side. Slice into 6 equal pieces and garnish with fresh sprigs of cilantro and serve salsa on the side.
