Ingredients:

1/2 cup margarine or butter (melted) (Butter is always better!)

4 slices white bread cubes (crusts off) I use English Muffins.

3 eggs – slightly beaten

1 cup sugar

2 Tablespoons flour

1/8 teaspoon salt

1 large can pineapple – crushed or cubed (I prefer cubed) undrained

Instructions:

Roll bread crumbs in margarine to coat. Set aside.

Mix together eggs, sugar, flour, salt and pineapple. Place in an 8 or 9 inch square baking dish. Top with buttered bread cubes. Bake in preheated oven at 350 degrees until firm (approx 30 minutes). Can be cut and served in squares; I like to scoop into little bowls and have been known to glop whipped cream on top! Its also a little dressier to cut up English muffins – nice texture, too!
