Baked omelettes recipe details
- Ingredients:
- 5 eggs
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 1 cup cottage cheese
- 3 cups Monterey Jack, grated
- Meats, veggies, nuts, potatoes (optional)
In large mixing bowl using an electric mixer, beat eggs well with mixer. On low speed, add flour and baking powder; mix well. With fork, fold in cheeses and any other ingredient you choose. Bake in individual oven proof 2-cup containers at 350 degrees for 20 to 30 minutes.
Top with salsa, green chili, red chili, or whatever you choose. Serve with Santa Fe Potatoes, homemade bread or English muffins.
