Baked cheesy potato frittata recipe details
- Ingredients:
- 4 eggs, beaten
- 1/3 cup plain yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon chopped garlic
- cheddar cheese
- dash of Tabascored pepper sauce
- 2 or 3 cooked potatoes, cooled and sliced
Preheat oven to 325 degrees. Grease shallow glass baking dish. Layer bottom of dish with sliced precooked potatoes (Yukon gold is best). Place a layer of cheddar cheese over potatoes. Top with eggs, yogurt, salt, garlic, and Tabasco,and sprinkle with dried tarragon and black pepper. Bake for 25 minutes. Turn oven off and leave dish in oven for another 10 minutes.
